If you have Celiac’s it is important that you make sure that you are taking gluten free nutritional supplements and vitamins.
Although, you usually look for gluten in food that you consume. If you have Celiac’s you will need to check the ingredients in your medicine, vitamins, and supplements. Checking for any cross contamination risks associated with the processing of the gluten free dietary supplements is also very important.
Other personal products also need to be checked. This might include toothpaste, shampoo, deodorant, lotions, sunscreen, as well as any other products that you consume or put on your body.
If you have just discovered that you have Celiac as my husband does. You are probably already deficient in several vitamins or minerals. Some of these could be iron, zinc, folate, vitamin B12, and magnesium. Because of the damage to the small intestine and it being unable to absorb these properly by the body. Once you start eating a gluten free diet you will probably want to supplement with certain vitamins and minerals to make the recovery faster. However, you will want to make sure you are taking gluten free vitamins and minerals. Some active ingredients in these can contain gluten.
Once your small intestine is healed your body should be able to absorb nutrients properly again. Some people might continue taking gluten free nutritional supplements because they benefit from them.
Gluten free dietary supplements may still be needed due to the gluten free products today lacking in the amounts of fiber, iron, thiamine, folate, niacin and riboflavin contained in them. There are new gluten free products coming to the market all the time. If,they are not Certified Gluten Free than you need to check further.
So being on a gluten free diet today and maintaining proper nutrition can be very challenging.
With manufactures processing more than one product in the same plant there is a greater risk of cross contamination. Many times these manufactures use grain as fillers. There are several terms used in grain based fillers in supplement products here are some of them: Artificial flavors and colors, dextrin, food starch and glaze, Hydrolyzed vegetable protein, MSG, maltodextrin, wheat germ, textured plant protein and natural flavors. Hidden gluten is also found in products such as soups, soy sauce, salad dressing.
What is Cross contamination? This is when food with gluten come in contact with or close to food the is gluten free. When a restaurant fries gluten free products in the same oil as they fry products with gluten or the prep area is used for both gluten free and gluten preparations.
Going to a restaurant is your biggest risk of getting cross contaminated. With a recent study showing it happens as often as 41% of the time.
To make sure you are taking gluten free nutritional supplements and vitamins check them very carefully. Even if they say gluten free you will need to know if they are processed where other products with gluten are processed.
There are many healthy food choices that are delicious and naturally gluten free. What is gluten free eating all about? For me it is about keeping my husband healthy, because he was diagnosed with Celiac Disease it is vital that he does not have any gluten at all in his diet. And because he shows no outward symptoms when he consumes gluten it is harder to make sure that he doesn’t have gluten.
My most challenging thing was changing the way I cooked. You have to learn what food is gluten free. Not all foods are gluten products in fact their are a lot of naturally gluten free items available but you have to be aware of how you cook them to keep them that way. The way I cooked using frozen things like breaded meats which were easy and quick but that all had to change. They do make gluten free breading now horray!
One of my staple casseroles is the green bean casserole which I am always required to bring to Thanksgiving. The first year I made two different casseroles one gluten free with no fried onions on top and one regular. This year however I found gluten free fried onions so I took a chance and made it with progressive gluten free soup and used the gluten free fried onions for on top. I didn’t tell anyone until it was gone so I guess it was a success!
Now I have to prepare for meals more than I ever had to before. I don’t have to eat gluten free but it only makes sense to and I really don’t mind I didn’t realize how much of my food was already gluten free. It really is a life changing event but in the long run it is also a healthy one. Your core food groups should still be fruits, vegetables, meats and dairy.
There are many healthy food choices that are delicious and naturally gluten free. There are several food groups that are naturally gluten free and they include foods such as vegetables, fruits, meats, dairy, fish and seafood as well as beans and nuts.
Always Read Labels
Just about all Fresh and frozen fruits and vegetables are naturally gluten-free. It is however, important to check the labels on any vegetables and fruits that have been processed. Dried fruit and pre-packaged items such as smoothies. Additionally, packaged frozen potatoes are not always gluten-free, and labels should be read carefully when considering these products.
The food industry is getting better at marking the packages with the Gluten Free label which in turn makes for easier shopping for the consumer.
Many items are naturally gluten free but, they can be easily cross contaminated by preparing foods where you are also preparing gluten containing foods. Such as using a cutting board where you have cut bread. Or using a toaster that has been used to toast bread that contains gluten. Or just using a knife to cut something with gluten and not washing it before using it to prepare gluten free foods.
Many Grains are Gluten-Free
You can find many grains at your local grocery store and then their are others that you may have to look harder for perhaps at a health food store. Times are changing for the gluten free group store are becoming more aware of the need for this type
of food and are making it easier for the consumer to find and recognize them. Also, the product manufacturers are producing prepackaged products that are now gluten free such as, cake, muffin, bread mixes and much more you just have to know where to find them in your store. Do not buy grains in bulk because of the chance for cross contamination.
These two grains are gluten free but do have gluten in the seeds so if they are not harvested right gluten contamination can occur. Depending on your sensitivity you may want to stay away from pure wheat grass and barley grass. Grains should contain less than 20 ppm of gluten to be considered safe.
Naturally Gluten-Free Grains
Below are some grains that are naturally gluten free.
There are many products that are marked gluten free and that really helps the consumer greatly. Beware their are also products that are not marked but may be gluten free. Your job is to be a good label reader to check the ingredients carefully to make sure it is safe.
Most wheat products contain gluten such as breads, crackers, pasta and other baked goods. Today their are alternatives to many of these items using other non gluten flours and grains. Of course these products are prepackaged but use can purchase flour blends that will allow you to make your own items from scratch.
There is usually a freezer section with gluten free items which is where you will most likely find the bread. One of my favorite things to make is muffins using the King Arthur’s Brand muffin mix which allows you to add your own ingredients. I will add cinnamon, dried blueberries, cranberries and walnuts and they are delicious!
Many cereals contain gluten, their are several that are gluten free. Not all brands make it easy to tell but General Mills Cheerios make it very obvious with there Gluten Free label right on the front of the box. Please note not all the varieties are but their is a good selection. Not all cereals are marked gluten free so check the ingredients to make sure. There are some cereals you might think should be gluten free but when they are processed they might use ingredients that have gluten. For example malt flavoring is used in cornflakes and rice puffs.
As far as breakfast goes pancakes are one of my husbands favorites. It took a while to find the pancake mix that was just right but I have and I would like to share it with you Here! I use King Arthur Brand Pancake Mix it is light and fluffy. A trick I use to make them more to our liking is to add a teaspoon of cinnamon to the mix. It gives the pancakes a different flavor.
Soups and Sauces
When it comes to soups and sauces many prepared soups include wheat as a thickener therefore if it doesn’t say it is gluten free you must check the ingredients carefully especially cream soups. Of course if you make your own soup you can control what goes in it. I haven’t found any canned soups that are perfect but Progresso makes a fairly decent one but you still have to check each flavor because not all are gluten free.
Most beverages are gluten-free, including juices, sodas, and sports drinks.
Generally most wines are considered gluten-free to the FDA standard because they contain under 20ppm of gluten. Wines fermented in barrels lined with wheat paste do not contain enough gluten to cause a reaction. These wine might include muscatel, port, and maderia.
Wines with added flavoring or color are not safe for someone with Celiac. These are generally dessert wines. Also, wine coolers made with barley malt are unsafe. For these, consumers should check the label, and if in doubt, opt out or contact the company for clarification.
Hard liquor, distilled liquors, and hard ciders are all considered gluten free. Others made from gluten containing grains that are not distilled which includes beers, ales, lagers, and malt beverages are not gluten-free. However, their are several brands of gluten-free beers available in the United States and abroad. There are more coming on the market all the time. My husband found one he likes called New Grist.
Check, Check, and Recheck!
These are the Steps I take to make sure my packaged foods are gluten free before I purchase them.
First I look for the GF label which tells me the FDA has passed this product as Gluten Free.
Second, if no label is on the products I would check fo common gluten containing ingredients such as Wheat, Rye, Barley, Malt, Oats (not specified gluten free) and Brewers Yeast.
Third I check for the allergens found in the product. Then check the overall ingredients to make sure their aren’t any hidden gluten ingredients.
I also, have an app on my phone that lets me scan the barcode and tells me if it “contains no gluten”, or it might say “no gluten ingredients found.” This is just one more way to make you feel more comfortable with the product you may purchase.
After doing the above checks you might want to also check with the manufacturer to see if the product is processed in the same area as other products that contain gluten. If so, there is a risk of cross contamination.
Are gluten products bad for you? No they are not unless you have Celiac’s Disease or have a gluten senitivity.
So what is gluten free eating all about? It is making sure your foods and other products you use do not contain gluten. Being sure the foods you eat and even the products you use don’t contain gluten is the only safe way to control Celiac disease at this point in time. I hope this has helped you learn what food is gluten free. There is always research being done and maybe one day a cure or an easy way to help will be available. In 2018 my husband was diagnosed with Celiac Disease. It was a real eye-opener for my family and I. Now we have to think twice before we do anything with food in our home. It takes longer to do the grocery shopping. And the cost for gluten free products is so much higher.

And because their is a demand for gluten free foods it has gotten easier to find products that are gluten free and go to restaurants and find a gluten free menu.
So now when will the prices decrease? That is what I want to know!
What is Celiac’s Disease
Celiac Disease is a serious autoimmune digestive disease. A reaction occurs when someone with Celiac’s eats gluten which is a protein found in wheat, barley, and rye. This starts an immune reaction that causes antibodies to attack the small intestine lining by destroying or flattening the villi.
The villi are small finger like projections that line the small intestine and promote nutrient absorption into the body. Without the villi your body will not be able to effectively absorb nutrients through the small intestinal wall. Therefore, minerals, vitamins, proteins, and fats pass through the body without being absorbed which can lead to malnutrition.
Gluten is the protein that makes dough elastic, and gives the chewy texture to bread.
Celiac disease, is also known as celiac sprue or gluten-sensitive enteropathy.
Celiac Disease is estimated to affect 1 in 100 people around the world. Approximately three million Americans have Celiac Disease. There are about Two and one-half million Americans still not diagnosed and are at risk of long-term health complications.
Celiac Disease vs Gluten Sensitivity
There is one big difference between Celiac disease and having a Gluten Sensitivity and that is the small intestine. Celiac disease damages the lining of the small intestine if any amount of gluten is consumed. With Gluten Sensitivity you could have symptoms like abdominal pain, fatigue, headaches, skin rash, wheezing, or diarrhea that can be painful but it is not damaging your small intestine. A Gluten Free Diet for both groups of people will eliminate the symptoms and start to heal the villi in the small intestine. Wheat allergies are often outgrown.
Who gets Celiac Disease?
Celiac disease is hereditary so if you have an immediate family member with it your risk of having it or getting it is higher. It is a genetic disorder so if you have a parent, sibling or child who has celiac disease, you have a 1 in 10 chance of getting it yourself. Because you have the genes for Celiac doesn’t mean you will automatically get it.
Caucasians and people with other diseases are groups to have the highest risk for acquiring Celiac Disease.
Children with a parent or sibling with celiac disease should be screened.
Researchers still don’t know why people that are predisposed for Celiac can tolerate it for years and then develop the immune reaction. Celiac can develop at any age once you start eating gluten. People with celiac disease have a higher chance of developing osteoporosis, infertility, and some neurological problems. Traumatic events can trigger Celiac’s
On average, it takes four years for someone with symptoms to be diagnosed with Celiac’s. Many do not have outward symptoms of Celiac Disease therefore would not think to go to the doctor until it is serious. Sixty percent of children and forty-one percent of adults do not show signs of Celiac’s. Left untreated their can be serious health issues.
Below are several factors for putting you at a greater risk for developing Celiac Disease
Genetically predisposed people
Exposure to gluten before 3 months of age
Major life event, emotional stress, pregnancy, or surgery
Autoimmune diseases, Thyroid disease, Type 1 diabetes
Another genetic disorder such as Down syndrome or Turner syndrome
Rheumatoid arthritis, or Addison’s disease
Symptoms of Celiac Disease
There are many symptoms of celiac disease from mild to severe. Some people have no symptoms, although they still are developing intestinal damage. Irritable bowel syndrome, Crohn’s Disease, and gastric ulcers can cause misdiagnoses of Celiac Disease.
Symptoms can start as soon as gluten is introduced
Digestive symptoms may include one or more of the followingAbdominal bloating and pain, Constipation, Diarrhea, Pale, foul-smelling stool, and Vomiting.
The following symptoms are more likely to be seen in Adults:
Bone or joint pain/arthritis, Depression/Anxiety, Dermatitis Herpetiformis/Rash, also, Fatigue, Migraines or Seizures, Mouth ulcers/canker sores, Osteoporosis or osteopenia, You may also have Liver and Billary tract disorders, Peripheral neropathy, and Anemia.
Digestive symptoms are more common in infants and Children
Some of those symptoms are :
Abdominal bloating and pain, Attention Deficit Hyperactivity Disorder (ADHD), Chronic diarrhea, Constipation and Delayed growth and puberty. Also, they may find they have Fatigue, Irritability and behavioral issues, Short stature/failure to thrive, Vomiting as well as Weight Loss. The dentist can notice Teeth that are pitted, discolored, grooved, or deformed.
Untreated Celiac Disease – What can it lead too
Because the symptoms of celiac disease can be varied, it often goes undiagnosed or misdiagnosed.
Untreated Celiac Disease Can Lead to:
Long-Term Health Conditions
Iron deficiency anemia, Pancreatic insufficiency, Gall bladder malfunction, Lactose intolerance, Early onset osteoporosis, Vitamin and mineral deficiencies, Infertility and miscarriages, Intestinal lymphomas and other GI cancers, Central and peripheral nervous system disorders. Epileptic seizures, neuropathy, ataxia, dementia, myopathy.
Tests to help diagnose Celiac!
There are two blood tests used to help diagnose Celiac Disease. The first one is a Serology test which looks for protein made by your immune system. Tissue Transglutaminase Antibodies are present is about 98% of people with Celiac’s this test is known as the (tTG-IgA) test.
The second one is an analysis of your DNA to look for HLA class II genes. Specifically DQ2 or DQ8 located on chromosome 6p21. These genes are thought to be necessary for a person to develop the disease. Although many people have the genes and never develop Celiac Disease. If you don’t have the genes your doctor can rule out Celiac Disease.
If you blood test comes back positive you can then have a biopsy of the small intestine to confirm the findings. An endoscope is placed through the mouth and stomach into the small intestine and a small amount of tissue is removed. Celiac disease damages or destroys the small, hairlike protrusions in the intestine known as Villi..
Most people with celiac disease never know they have it. Researchers think as few as 20% of people with the disease ever get a proper diagnosis. The damage to the intestine is very slow, and symptoms are so varied, that it can be years before someone gets a diagnosis.
So what can be done to help!
What is gluten free living to someone with Celiac or even a Gluten sensitivity? It is essential to their well-being to avoid gluten at all costs. Since their is no known cure for Celiac Disease at this time. Being on a strict gluten free diet is the best way to keep the disease under control. This will stop the symptoms and allow your small intestines to begin repairing itself. After you have changed your diet to gluten-free you should start to feel better within days. If you are showing signs of nutritional deficiency you can take gluten-free vitamins and mineral supplement to help get your levels back to normal. For the skin rash their is a medication you can apply.
Studies are underway for new drugs that would enable people with celiac disease to eat gluten safely. These include enzymes, taken as a pill, that break down the gluten. Immunotherapy injections may counteract the underlying immune reaction to gluten. Scientists have even tested hookworms, a parasite that can live in the gut, to see if they will help people with celiac disease.

Well that is just what happened in my family. My husband was diagnosed with Celiac’s Disease in his early sixties.
So we had to change the way we ate, what we used as far a skin care products, laundry products, and even our toothpaste and shampoo. It was a big adjustment.
Learning about what gluten is and what contains gluten was something we had to do just to be able to eat correctly to keep the Celiac’s Disease under control. We were so surprised to learn how much gluten is in the daily products and food that we eat.
